Marion's Culinary Corner

 

Share the Love Moroccan Stew 

 

Everyone loved the feast at the Share the Love event!  So by popular request, here is one of the favourite dishes:

  • 1 tbsp olive oil

  • 1 cup chopped onions

  • 1/2 cup chopped celery

  • 2 chopped red peppers
  • 4-5 cloves garlic, minced
  • 1 box of Campbell's chicken broth

  • 4 cups peeled sweet potatoes, cut into 1/2 inch cubes

  • 1 29 oz can diced tomatoes (including juice)

  • 2 15 oz cans garbanzo beans (chickpeas) drained

  • 1 tbsp lemon or lime juice

  • 1 tbsp grated ginger root

  • 1 tsp ground cumin

  • 1 tsp chili powder

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/2 cup cranberries, fresh or dried (or raisins)

  • 4 tbsp peanut butter

  • 1 bunch of chopped fresh cilantro (1/2 cup or more to taste)

1. Heat olive oil in a large pot over medium-high heat.  Add onions, celery, peppers and garlic.  Cook and stir until vegetables begin to soften, about three minutes.

2. Add all remaining ingredients, except peanut butter and cilantro. Bring to a boil.  Reduce heat to low and simmer, covered, for 20 minutes.

3. Stir in peanut butter and cilantro. Mix well.  Simmer for 5 minutes. Serve hot with fresh bread!

 

This makes 9 one cup servings, a sure crowd pleaser that is easily tripled or doubled depending on the size of your party!
